Mexican Egg Salad

Mexican Egg Salad

If you’re in a hurry, try making this egg salad. It’s very good, and one of the easiest recipes I’ve ever followed. All you need to do is mix up the following ingredients in a bowl:

6 large hard-boiled eggs, peeled and chopped
1/4 cup extra-virgin olive oil
1/4 cup prepared salsa
1 Tbsp. fresh cilantro, chopped
2 tsps. lemon or lime juice
1 tsp. ground cumin
Minced sweet white onion to taste
Salt and pepper to taste
Optional: minced jalapeno to taste

The result is delicious and healthy. It certainly beats fast food any day.
